This week our recipe comes from Chef Ashton Mitchell's larder at
Leopard Mountain Game Lodge... an ideal celebration treat!
Red Velvet Cupcake Recipe
To buy
125g Cake flour
¼ tsp salt
1tbsp cocoa powder
60g softened butter
150g white sugar
1 egg
1 tsp vanilla essence
1 tsp milk
1 tbsp red food colouring
½ tbsp white vinegar
½ tsp bicarbonate of soda
Icing
60g cream cheese
30g softened butter
½ tsp vanilla essence
¾ cup icing sugar
To make

Cream butter & sugar. Add egg, vanilla & milk. Mix well.

Add the rest of the ingredients. Mix well.

Grease mini muffin pan. Add 1 tablespoon of batter per cup.

Bake at 160° for 10 min or until cooked through/
Icing

Place cream cheese, butter & vanilla in a bowl.

Using an electric mixer, beat until pale.

Gradually add icing sugar, beat until combined.
