Serendipity Country House sent us this tasty sounding soup from Chef Lizelle to share with our readers.
Curried Sweet Potato Soup
Serves 6
To buy
-
Oil
-
1 tbsp curry blend whole spices
-
2 onions, peeled and chopped
-
1 celery stick, chopped
-
1 clove garlic
-
L,4 kg sweet potatoes, peeled and roughly chopped
-
1 cube vegetable stock
-
1 tin coconut milk
-
Salt, pepper and sugar to season
To make
Heat a small amount of oil in a large pot. Fry the onion, carrot and celery and sauté for a few minutes. Add the garlic, sweet potato and the remaining ingredients, except the seasoning. Cover with water. Bring to the boil and simmer slowly for 20 minutes or until the sweet potatoes are very soft. Leave to cool slightly and purée. Taste to adjust the seasoning and serve with yoghurt and mint raita and spicy coconut sprinkle
