Pap and Sous aka Train Smash Recipe

Time for another traditional South African recipe. This time "Mielie Pap and Train Smash". Yummier than it sounds!

Mielie Pap with Sous (Train Smash)

 

Mielie Pap

 

Ingredients:

  • 500 ml water
  • 3 ml salt
  • 700 ml maize meal

 

Method:

 

Boil the water and slowly add maize meal until it forms a "pyramid " in the middle of the pan. Cover and simmer until a "skin" has formed around the maize meal. Stir with a fork till fine and crumbly. Replace lid and simmer over LOW heat until done. Stir periodically to break up the lumps. Cook for 30 - 40 minutes.

 

 

Train Smash

Sauté 3 chopped onions and 2 - 3 chopped fresh tomatoes till tender and add the following:

 

  • 1 c (250 ml) tomato sauce
  • 80 ml vinegar
  • 80 ml Worcestershire sauce
  • 30 ml sugar
  • 125 ml (half a cup) water
  • 2,5 ml (half a teaspoon) dry mustard powder
  • salt and pepper to taste

 

Cook for about 2 minutes and thicken with cornflour mixed to a soft paste with cold water.

 

Yum!

 

Great served at a braai.

I use fresh tomatoes about 5, fresh onions about 3 big ones, red and green peppers sliced thinly, 3 cloves garlic, chilli to taste, one or two glasses of semi sweet white wine, salt and pepper to taste and I let it simmer over the coals in a flat pot adding water as needed then about half an hour before I serve it I sprinkle mealie meal into it to thicken the sauce. It works well and I have had guys wiping the pot out with 'aanbrandsels' from the pap pot.
