JACKQUIE REY'S FOOD MATTERS CHRISTMAS TURKEY STUFFING
Ingredients
- 1 Large Onion Chopped Finely
- 100 G Streaky Bacon chopped into pieces
- 50 G Butter
- 62 Ml Fresh Herbs, Parsley, Majoram, Thyme,
- 100G Stale White Bread Crumbs.
- 1 Egg Beaten
- 500G Pork Sausage Meat
- 200G Tinned Chestnuts
- 100G Cranberries
- Sea Salt and Freshly Ground Black Pepper.

Method
- Fry bacon until crisp in a large frying pan.
- Remove bacon from pan, add butter and fry the onion until soft, add the breadcrumbs then fry until golden brown.
- Place in a bowl with the remaining ingredients and mix thoroughly by hand until well blended.
- You will probably have to look for tinned chestnuts as well or substitute macadamias.
- Get the dried Cranberries and put in boiling water overnight if you can’t find tinned ones.
