Denise’s Curry Chicken
(Serves 6)
To Buy:
(All spices and spice blends are available from Pick n Pay)
To make:
- Fry the onion with garlic and ginger, star anise & cardamom.
- When onion is brown, add chicken pieces and salt.
- When the chicken’s 'half done', add potatoes.
- When potatoes are 'half done', add masalas & all other spices
- Allow the curry to simmer, adding small amounts of water as needed to avoid it drying out.
- When potatoes are soft, the curry is ready!
- Add salt to taste
- Serve with basmati rice and sambals or a tossed salad
