Denise's Chicken Curry Recipe from the Portfolio Office Kitchen

On Fridays, Denise, our in-housen cook, often makes the yummiest chicken curry for the Portfolio staff. The aroma alone is enough to distract most of us from work - but the taste is out of this world!

Denise (below) kindly shares her own recipe for Chicken Curry with our readers today.

 

 

Denise’s Curry Chicken

(Serves 6)

 
To Buy:
 
  • 1 Whole chicken, cut in pieces
  • 6 potatoes
  • 2x Onions
  • Garlic and ginger
  • 2x All stars / star anise
  • 6 Cardamom pods
  • 1 tsp Curry powder
  • ½ tsp Tumeric
  • 2 tsps Mother-in-Law spice
  • 2 tsps Meat Masala
  • 1 tsp 11-in-One
  • 2 tsps Chicken Masala
 
(All spices and spice blends are available from Pick n Pay)
 
 
To make:
 
  1. Fry the onion with garlic and ginger, star anise & cardamom.
  2. When onion is brown, add chicken pieces and salt.
  3. When the chicken’s 'half done', add potatoes.
  4. When potatoes are 'half done', add masalas & all other spices
  5. Allow the curry to simmer, adding small amounts of water as needed to avoid it drying out.
  6. When potatoes are soft, the curry is ready!
  7. Add salt to taste 
  8. Serve with basmati rice and sambals or a tossed salad

Liz, we will be visiting you on a Friday at the office when we arrive - in fact it will be Friday the 5th August 2011 so 5 more portions required please - we will bring the wine!! We don't have a Pick N Pay in UK so the best thing is for us 5 to join you - and I love that Smile Denise!
