We received this yummy sounding recipe with our latest Makakatan Bay Lodge Newsletter and just had to pass it on to our readers...

The recipe is from Theresa Rattray, owner of ‘Thyme Square’ Coffee Shop & Deli in St Lucia. Theresa is simply a ‘Goddess in the Kitchen’ and has often inspired our chefs at the Lodge with many of her wonderful recipes!

 


 

Simple and Delicious Chocolate Brownie Recipe

 
 
Melt in the microwave for 2 minutes:
375g dark chocolate
375g butter
 
 
Beat well:
6 eggs
500g castor sugar
1 Tbs vanilla essence
 
 
Sieve together:
225g cake flour
1 tsp salt
 
 
  • Mix all three mixtures together and bake in a greased roasting pan for 35 minutes at 180 deg C
  • Serve with good quality vanilla ice cream and coffee.

This choc brownie has the best fudge crusty top with soft choc wonder in the centre. My family enjoy it and use any excuses for me to make it. I recommend it as a dessert and not as a tea time cake. In my house anytime is dessert time. If you love chocolate this is the one!
