The recipe is from Theresa Rattray, owner of ‘Thyme Square’ Coffee Shop & Deli in St Lucia. Theresa is simply a ‘Goddess in the Kitchen’ and has often inspired our chefs at the Lodge with many of her wonderful recipes!
Simple and Delicious Chocolate Brownie Recipe
Melt in the microwave for 2 minutes:
375g dark chocolate
375g butter
Beat well:
6 eggs
500g castor sugar
1 Tbs vanilla essence
Sieve together:
225g cake flour
1 tsp salt
- Mix all three mixtures together and bake in a greased roasting pan for 35 minutes at 180 deg C
- Serve with good quality vanilla ice cream and coffee.
